The Cuisinart CEK-40 is an attractive, well-built electric knife. Its ergonomic handle spares your wrists and hands and makes the knife comfortable to use whether you're right-handed or left-handed. Further, the knife’s one-touch power trigger makes it easy to operate, and it includes a safety lock.
This Cuisinart model’s motor is quiet but powerful enough that the knife can cut through most foods. However, it struggles with thick cuts of meat like roasts. The knife comes with two 8-inch blades: a carving blade for meats, cheeses, fruits and vegetables and a bread blade that can slice loaves, bagels and rolls without shredding them. Both blades are made of stainless steel, which resists rust and corrosion, and they are durable enough to not bend or break while slicing. You store the base and blades on the included wooden butcher block, which also includes a cord storage section.

The Hamilton Beach 74250R electric knife is inexpensive. Even so, it has a powerful motor and comes with two strong, 7.5-inch stainless steel blades that resist bending and breaking.
The serrated blades move smoothly through meats, cheeses and soft bread, creating even, professional-looking slices. However, the blades are shorter than most, which slows them down a bit while slicing thick cuts of meat. They click into place so they don’t fall off while you cut, and to remove them, you just slide the release button.
This corded electric knife’s large ergonomic handle is easy to grip, and the nonslip trigger protects against accidents. The Hamilton Beach 74250R comes with a serving fork and a gray case lined with a protective foam insert where you can store the knife base and the blades.

The American Angler PRO 32352DS is a durable electric knife that comes with five stainless steel blades designed to clean fish. However, it also cuts meat and other foods with little trouble.
This is a heavy-duty electric knife with an 8-foot cord as well as an all-metal transmission that creates plenty of power and consistent blade action. As such, it can tackle jobs like filleting a big catch of fish. The plastic body is vented to keep the knife from overheating.
The ergonomic handle has a rubber strip on top to make it easy to grip, which is helpful when working with slippery raw fish. This American Angler model also comes with a mesh glove and bag. One drawback is you need an 110-volt power outlet to use this knife, which could be a problem outdoors or on a boat.

The affordable Black & Decker ComfortGrip 9 Inch Electric Knife is a good choice for cutting bread and meat. Its 100-watt motor can power through most foods, and it is even useful for slicing blocks of craft or upholstery foam. This knife’s 9-inch serrated blade is great for carving turkeys, hams, roasts and other big cuts of meat. You can always sharpen the blades if they become dull, and they sit close together so meat doesn’t tear or shred while you cut it. Since the blades are made of stainless steel, you can wash them in the dishwasher on the top rack.
This knife has a nonslip handle and safety lock that keeps it from starting accidentally. Also, the handle is designed to reduce hand and wrist strain and fatigue.

The Mister Twister Electric Fisherman MT-1201 electric knife is built to clean and fillet fish and other soft meats, but you can use it to slice other foods as well. It has stainless steel blades and a heavy-duty motor as well as an expandable power cord so you don't get tangled up while slicing.
This Mister Twister knife includes a 7-inch blade, but you can order an 8- or 9-inch blade separately. Its potent motor moves the blades at approximately 2,800 to 3,000 rpm – fast enough to make quick work of cleaning fish or cutting other meats. Further, the blade’s cutting action is so precise it can remove fish bones.
The Electric Fisherman MT-1201 comes with a carrying case, which makes it easy to tote around on fishing trips. However, you need an electrical outlet to use the knife.

The Proctor Silex Easy Slice Electric Knife is a helpful kitchen tool that evenly slices meat, vegetables, fruits and other foods – as long as they aren’t too large or tough. This knife comes with a set of stainless steel carving blades that work well on turkey, ham, roasts and other cuts of meat. You can buy bread blades separately to slice bread loaves, rolls and bagels. Each durable blade is 7.5 inches long.
The Easy Slice Electric Knife is lightweight, and its contoured grip makes it easy to hold. However, you must hold down the trigger the entire time you cut, which can cause wrist and hand fatigue if you have lots of food to slice. This Proctor Silex knife is corded, which limits where you can use it.
