Its large, bright display is easy to view, and the app integration means you can have remote control of the machine. Performance & Heating
Each sous vide underwent two tests: a steak test and a chicken test. This immersion device created deliciously tender meat in both instances and was a favorite among our taste testers, though the meat did turn out slightly tougher than the ChefSteps Joule. It also worked quickly to heat the 2.5 gallons of water we used taking only 35 minutes to reach 130 degrees and 50 minutes to reach 150 degrees. We found the Anova sous vide easy to operate as it provided both tangible buttons and an app for you to use. On the side is a wheel that you turn to raise or lower the temperature until it gets to your desired setting and then you can press the start button on the top of the device to get it heating. We found the mobile app not only easy to navigate but also compatible for both Apple and Android users, so a wide audience can use it.
The Anova’s 800-watt heating element maintains an accuracy of plus or minus 0.01 degrees Fahrenheit. Such accuracy is critical for the precise temperatures required for proper sous vide cooking. A luminous display clearly shows temperature and other features, and it’s large enough that you can see it from across the kitchen.

This device cannot go lower than 77 degrees and goes as high as 210 degrees, which gives you a decent range to work with. It is designed to heat up to five gallons, which is mid-range for sous vide cooking and will allow you to cook a decent amount of food at once. If you're wanting to cook a large gathering, you'll probably want a device that can heat more water, like the Nomiku. When cooking, you'll want the base of the Anova to be immersed between 2.5 and 7.5 inches to allow the device to run properly.
