How do Instant Pots work?
As mentioned, most Instant Pots feature a tight seal that closes over a container. As this sealed container is heated, steam is trapped inside, which causes pressure to increase.
The increased pressure pushes the temperature past boiling point - you will be achieving a temperature within this sealed space that can't be achieved in a normal cooking atmosphere.
